SAMSUN CUISINE

In Samsun, while foods pertaining to Black Sea are in great demand, tastes, specific to this city, are also consumed with a great pleasure. Diet of Samsun includes corn, cabbage and white beans mostly. Also, affected by Black Sea cuisine, Samsun Cuisine has a variety with meat, rice and crusty foods. Besides traditional tastes such as black cabbage soup, keskek (a dish of mutton or chicken and coarsely ground wheat ), bread with anchovies, corn bread; Bafra pitta, tirit (boiled minced meat sauce poured on diced stale bread) and fish types specific to Samsun are important tastes of Samsun Cuisine.

Located in southern of Anatolia and middle Black Sea Region, Samsun has varied climate and geography, and therefore while different plants, leaves and sea products are wide at coastal line, inner region’s cuisine is based on pastry and meat dishes. While we were preparing this section of the site, we benefited from ‘Samsun Yemekleri’ (Samsun Cuisine) book by Samsun Provincial Directorate of Culture and ‘Orta Karadeniz Bölgesi Coğrafi İşaretli Ürünler Kataloğu’ (Middle Black Sea Geographically Marked Products Catalog) by Middle Black Sea Development Agency. Also, for some districts, local people were interviewed and cuisine section was prepared in the light of this information.
